Our front row ticket winner, Cathy, provided this delicious original recipe for Sweet Potato Holiday Bread for our Holiday Recipe contest! Delicious! Hope she, and everyone, had a wonderful time with Buddy Valastro - the Cake Boss last night in Verizon Hall.
Warm Sweet Potato Holiday Bread
- 2 Cups Mashed cooked sweet potatoes
- 2 cups sugar
- 1 cup oil
- ½ cup brown sugar
- 2 eggs
- 3 cups flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 1 tsp nutmeg
- ½ tsp ginger
- 1 cup raisin
- Topping ingredients: 1 cup chopped pecans, 2 tbl Honey, ½ tsp cinnamon, 2 tbl sugar, 1 tbl brown sugar.
- Combine Sugar, brown sugar, flour, baking powder, baking soda, cinnamon, nutmeg and ginger.
- Using an electric mixer, add sweet potatoes mashed, oil, eggs…add raisins last.
- Pour into large loaf pan.
- Sprinkle honey-pecan on top.
- Bake at 350 degrees for 50 minutes or until toothpick comes out clean.
- Let stand an hour before cutting.
