Warm Sweet Potato Holiday Bread

Our front row ticket winner, Cathy, provided this delicious original recipe for Sweet Potato Holiday Bread for our Holiday Recipe contest! Delicious! Hope she, and everyone, had a wonderful time with Buddy Valastro - the Cake Boss last night in Verizon Hall.

Warm Sweet Potato Holiday Bread

  • 2 Cups Mashed cooked sweet potatoes
  • 2 cups sugar
  • 1 cup oil
  • ½ cup brown sugar
  • 2 eggs
  • 3 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • ½ tsp ginger
  • 1 cup raisin
  • Topping ingredients: 1 cup chopped pecans, 2 tbl Honey, ½ tsp cinnamon, 2 tbl sugar, 1 tbl brown sugar.
  1. Combine Sugar, brown sugar, flour, baking powder, baking soda, cinnamon, nutmeg and ginger.
  2. Using an electric mixer, add sweet potatoes mashed, oil, eggs…add raisins last.
  3. Pour into large loaf pan.
  4. Sprinkle honey-pecan on top.
  5. Bake at 350 degrees for 50 minutes or until toothpick comes out clean.
  6. Let stand an hour before cutting.
